It was good but not a big hit with anybody. Of course, I forgot to squeeze the lime over it so that might make all the difference in the world.
It was eaten up by the family ... I might make it again with a couple of minor changes ... like forget the tortillas and make it into a big Barbecued Chicken Salad!
Here's what I'll try next time:
Combine and cook over medium heat about 5 minutes:
1 rotisserie chicken (skin discarded, meat removed from bones and shredded)
1/2 cup bbq sauce
1 can black beans (rinsed)
1 can corn (drained)
Remove from heat and stir in juice of one lime.
Line a large salad bowl with lettuce leaves (torn up or whole ... whatever your preference). Pour the bbq chicken mixture on top of the lettuce.
Serve with sour cream as dressing and chips for garnish. (optional)
